Blenheim Restaurant’s mission, for example, is to promote
farm-to-table cuisine. Headed by Morten Sohlberg and Min
Ye, the restaurant in West Village, New York, serves up
products from Blenheim Hill Farm in the Catskills. Its dishes
incorporate red meat, poultry, honey, butter, and other organic
ingredients in a menu that changes with the seasons.
