GOGIGUI
Korean barbeque, or
gogigui
, features thinly sliced meat that has
been marinated in a mixture of soy sauce, garlic, sugar, sesame
oil, and pepper. The meat is then grilled with garlic, onions, and
green peppers, and served with pieces of lettuce or other leafy
vegetables that are used to make a wrap. Popular cuts of meat
include
bulgogi
, thinly sliced sirloin;
galbi
, beef short ribs;
daeji
bulgogi
, spicy pork; and
samgyeopsal
, unsalted pork belly. A
popular place to try gogigui is Sutbul Mapo Galbi, which uses a
plum-seasoned sauce for extra flavor.
